Sugar Plums

This recipe takes its inspiration from the Sugar Plums made famous in the popular nursery rhyme, “Twas The Night Before Christmas”. Quite different than an actual sugar plum, which is made mainly from colored sugar, this recipe combines the real fruit with a sweet and delicious glaze that can be made in under 5 minutes. Elegant enough for guests, but simple enough that you can make it in a pinch. As the alcohol is optional, you can make this recipe for kids or adults.

Directions:

Melt the butter in a large pan over low heat. Add the brown sugar and stir, being very careful not to burn (it will turn bitter) and cook for 1-2 minutes until syrupy. Pour in the Triple Sec (if using) and stir to combine. Add the plums and nutmeg and toss gently. Continue to cook for a few more minutes until the plums are warmed and covered in glaze. Plate individually or on a platter and serve with vanilla ice cream or whipping cream if desired.

Chilled Prawn Salad with Lemon Pepper Dressing

This refreshing salad is a real time saver as it can be made in advance and chilled in the refrigerator for up to 4 hours before serving. In fact, it enhances the flavor. Simply add the dressing just before serving and finish with a sprinkle of cilantro.

Directions:

Assemble the dressing and keep chilled until use. If it appears too think you can add a little water. Plate the salad with the lettuce on the bottom, then veggies and prawns. Cover and chill for a minimum of 10 minutes. Add dressing and cilantro and serve.

  • Ingredients
  • 1 pound cooked prawns, shelled
  • 4 cups Boston lettuce, torn into bite sized pieces
  • 1 avocado, peeled and sliced
  • 1 cup bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cilantro, chopped
  • Dressing:
  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tablespoon lemon rind, minced
  • 2 tablespoons fresh ground pepper
  • 1 teaspoon salt

Mixed Berry Tower with Drizzled Chocolate

This dessert literally takes minutes to assemble and it’s so beautiful to serve. Plus it’s full of antioxidants so it’s practically health food! Spoon it onto individual plates or if you are sharing the dish with just a few people you can use wooden skewers to pierce the fruit.

Directions:

Wash all the fruit and cut larger strawberries in half. Assemble into a tower on a cake stand or platter. Melt the dark chocolate and half of the condensed milk together in the microwave for 1 minute.Stir until a smooth consistency is reached. Return to the microwave if needed for 30 more seconds. Using a small spoon, drizzle the dark chocolate over the berries. You will have extra chocolate left over. Repeat the steps with the white chocolate.  Top with Skor bits and serve.

*If more chocolate is desired for the center fruit, you can warm the leftover chocolate in the microwave and repeat the process.

  • 1/2 cup of sweetened condensed milk, divided in half

Gnocchi with Mushroom Ragù

I absolutely love gnocchi. It’s so versatile and is one of those foods which takes on the flavor of whatever you put with it. This mushroom ragù has a hearty, meaty texture which pairs perfectly with the mild potato flavor of the gnocchi.

Directions:

In a very large pot, the butter over medium heat. Add the onion, garlic and mushrooms and season with salt and pepper. Cook for about 10 minutes, stirring, until the mushrooms have reduced by half. Stir in the wine, chicken stock and cream and cook for 5 more minutes. Keep warm over low heat. Meanwhile, bring a second pot of water to a boil. Add salt to the water if desired. Cook gnocchi just until it begins to float at the top of the water. drain and return to the pot. Add the mushroom ragù and toss to coat. Spoon onto individual plates and sprinkle with the fresh sage.

  • 1 16-20 oz package gnocchi
  • 1/4 cup butter
  • 8 cups mixed mushrooms such as button, crimini or portobello, sliced
  • 1/4 cup red onion, minced
  • 2 garlic cloves, minced
  • Salt & Pepper to taste
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • 1/2 cup whipping cream
  • 1 teaspoon finely chopped sage

Pomegranate Margaritas

These margaritas are are so tasty and I absolutely love the color. It’s very festive and transitions well between seasons. I make these margaritas on the rocks with frozen pomegranate juice. For a blended version, combine all the ingredients into a blender and pulse until smooth.

Directions:

Cut a small slit into 4 slices of the lime. Combine the pomegranate juice, lime juice, tequila and grand marnier in a pitcher and top with extra ice and extra lime slices. Place enough coarse salt onto a small plate to coat the bottom. Rim each glass with a lime wedge and place upside down into the plate. Move in a circular motion until the rim is coated with salt. Repeat with all glasses. Add lime slices to garnish each glass and fill with margarita mixture.

Ingredients
4 cups frozen pomegranate juice, prepared according to instructions
1 cup freshly squeezed lime juice
1 lime, sliced
1 cup Tequila
1/2 cup Grand Marnier
coarse salt

Macadamia Nut Crusted Banana Bread

This banana bread recipe has been in my family for years but what makes this version special is the crunchy topping thanks to the addition of crushed Macadamia Nuts. I find this recipe works best for mini loaves as the nuts are quite sensitive to heat and could burn if left in the oven for too long. Therefore the shorter baking time of mini loaves or muffins is your best bet. If you cannot find macadamia nuts you can substitute with Brazil nuts or any other you have on hand.

Directions:

Preheat oven to 350 degrees. In a small bowl, combine the flour, baking soda, baking powder and salt. In a large bowl beat together the sugar and butter and then add the bananas, eggs, yogurt and vanilla. Add in the flour mixture and stir. Drop heaping tablespoons of the batter into your loaf or muffin tin. Next, combine the nuts, brown sugar, butter and cinnamon together until thoroughly combined and sprinkle evenly over each loaf. Bake for 15-20 minutes until set.

Ingredients
2 1/2 cups flour
1 tsp baking powder
1 tsp baking powder
1 tsp salt
1/2 cup butter
1 1/2 cups sugar
2 eggs
1/2 cup vanilla flavored yogurt
1 tsp vanilla extract
Topping:
1 cup macadamia nuts, finely chopped
1/2 cup brown sugar
1/2 cup butter
1 tsp cinnamon

Chocolate Mint Fudge

If you enjoy the taste of a Laura Secord French Mint Chocolate Bar, you will love this fudge! It tastes so similar I couldn’t tell the difference. This recipe is very rich and smooth and with only four ingredients it couldn’t be easier.

Directions:

Line a square baking pan with wax paper so it comes up over all the sides. Place the semi-sweet chocolate chips and the mint chocolate chips a large microwavable bowl. Add the condensed milk and place into the microwave. Cook on high for 2-5 minutes until melted (stirring after 2 minutes) Once the chocolate is smooth remove from the microwave and pour into the baking dish. Using a spoon, spread the chocolate until even in the pan. Top with sprinkles and place into the refrigerator for 3 hours until cooled completely. Lift the wax paper out of the pan and place the fudge onto a cutting board. Remove paper and cut into squares.

Ingredients
1 300 gram bag of semi-sweet chocolate chips
1 300 gram bag of mint flavored chocolate chips
2 small cans of condensed milk
1 tbsp. green candy sprinkles

Savory Mushroom Antipasto

This delicious antipasto is very nice to serve as an appetizer or a light lunch. I love the combination of the savory mushrooms with the smooth cream cheese on the crisp french bread. You can change up the variety of cream cheese for a more intense flavor or use plain if you want keep it mild.

Directions:

Warm the butter in a large skillet over medium heat. Add the mushrooms and onions and saute for 5 minutes. Add the garlic, wine, soy sauce and season with salt & pepper. Cook for 2 more minutes. Stir in the parmesan cheese and set aside. Meanwhile, brush the french bread with olive oil and toast in the oven for 3-4 minutes until golden brown. Remove and spread each with a generous layer of cream cheese. Top each with mushroom antipasto and sprinkle with parsley. Serve warm.

Ingredients
2 cups mushrooms, thinly sliced
1 tablespoon butter
1/4 cup red onion, minced
1 garlic clove, minced
1/4 cup white wine
1 teaspoon soy sauce
Salt and pepper to taste
2 tablespoons parmesan cheese, grated
1 tablespoon olive oil
12 thin slices of french bread
1 cup herb cream cheese
1/4 cup parsley, finely chopped

Quick and Simple Seafood Chowder

This chowder is about as easy as it gets to make. It has a nice rich flavor and is loaded with seafood. In this recipe I use canned seafood including crab and clams for the broth, and I add shrimp and barbecued salmon at the end for added color and flavor. You can also substitute any other canned fish or seafood you have on hand. Even tuna is nice in this chowder. I have included 2 cooking methods below. Both are very simple and you’ll have dinner on the table in no time!

Directions:

Crock pot: Set the heat on your crock pot to low and add all the ingredients except the shrimp and bbq salmon. Cover and simmer for 6-8 hours. This will become the broth for your chowder. Uncover and discard bay leaves. Add the shrimp and the salmon, breaking up any large pieces with a fork. Do the same with the potatoes which should be soft. Cook for an additional 5 minutes until the shrimp are pink and the chowder is nice and hot.

Stove Top: Place a large pot over medium-low heat. Add all the ingredients except the shrimp and bbq salmon and bring to a boil. Cover, lower heat and simmer for 20 minutes. Uncover and discard bay leaves. Add the shrimp and the salmon, breaking up any large pieces with a fork. Do the same with the potatoes which should be soft. Cook for an additional 5 minutes until the shrimp are pink and the chowder is nice and hot.

Ingredients
2, 170 gram cans of crab meat with juice
2, 142 gram cans of baby clams with juice
2, 540 ml cans of sliced potatoes with juice
2, 354 ml cans of evaporated milk
2 cups raw shrimp, shells removed
2 cups barbecued salmon, skin removed
2 tablespoons dried onion
2 teaspoons celery salt
2 bay leaves
2 teaspoons dried parsley
Pinch of cayenne
Fresh Pepper to taste

Appetizer – Tomato Towers

I am always looking for interesting ways to serve up my favourite veggies. These tomato towers are so simple to create yet they are beautiful and elegant. I love serving them at dinner parties in the summer when tomatoes are abundant. However due to their color combination they can also be a festive addition to your holiday table.  If you cannot find orange or yellow tomatoes you can stay with red.

Directions:

Place a layer of tomatoes onto a serving dish. Top each one with a slice or two of goat cheese. Then add a second tomato of contrasting color. Top with a few basil leaves. Repeat the layers again finishing with some thinly sliced basil. Serve with your favorite vinaigrette salad dressing.

Ingredients:

  1. 8 red Campari tomatoes
  2. 8 yellow Campari tomatoes, sliced into 1/2 inch pieces
  3. 16 thin slices of goat or feta cheese
  4. 1 cup whole basil leaves + 8 leaves thinly sliced
  5. 1 cup vinaigrette dressing of your choice
